Using a french press pot to produce a cup of coffee with stable quality

How difficult is brewing coffee? In terms of hand flushing and water control skills, stable water flow has a significant impact on the flavor of coffee. Unstable water flow often leads to negative effects such as uneven extraction and channel effects, and coffee may not taste as ideal.

There are two ways to solve this, the first is to practice water control hard; The second is to weaken the impact of water injection on coffee extraction. If you want to have a good cup of coffee simply and conveniently, the second method is the best choice. In terms of product stability, immersion extraction is more stable and hassle free than filtration extraction.

Filtered extraction is a synchronous process between water injection and coffee droplet extraction, with hand brewed coffee as a typical representative. Soaking extraction refers to the continuous soaking of water and coffee powder for a period of time before filtration, represented by French pressure vessels and smart cups. Some people also believe that coffee made from a French press coffee maker is not as delicious as hand brewed coffee. This is likely due to the lack of proper extraction parameters, just like in hand brewed coffee, if the wrong parameters are used, the resulting coffee will not taste good. The difference in flavor performance between coffee brewed by soaking and filtering lies in the fact that soaking and extracting have a fuller and sweeter taste than filtering and extracting; The sense of hierarchy and cleanliness will be inferior to filtration and extraction.

By using a French Press pot to brew coffee, one only needs to master the parameters of grinding degree, water temperature, proportion, and time to brew a stable flavor of coffee, completely avoiding unstable factors such as water control. The process steps are also more worry free than manual flushing, only requiring four steps: pouring powder, pouring water, waiting time, and filtering. As long as the parameters are used correctly, the taste of coffee soaked and extracted is completely comparable to that of hand brewed coffee. The typical flavor characteristic of coffee roasting in coffee shops is through soaking (cupping). Therefore, if you also want to taste the coffee that a roaster would taste, then soaking is the best choice.

The following is a sharing of James Hoffman’s pressure pot brewing method, which is derived from cupping.

Powder amount: 30g

Water volume: 500ml (1:16.7)

Grinding degree: cupping standard (granulated white sugar)

Water temperature: Just boil the water (use 94 degrees Celsius if necessary)

Step: First pour in 30g of coffee powder, then pour in 500ml of hot water. The hot water must be completely soaked in the coffee powder; Next, wait for 4 minutes to fully soak the coffee powder in water; After 4 minutes, gently stir the surface powder layer with a spoon, and then pick up the golden foam and coffee powder floating on the surface with a spoon; Next, wait for 1-4 minutes for the coffee grounds to naturally settle at the bottom. Finally, gently press down to separate the grounds from the coffee liquid, meanwhile pour out the coffee liquid. The coffee brewed in this way almost matches the taste of the roaster during cup testing. The advantage of using soaking to extract coffee is that it can minimize the unstable flavor caused by human uncertainty factors, and beginners can also brew stable and delicious coffee. It is also possible to identify the quality of the beans, and the higher the quality, the better the flavor reflected. In contrast, defective beans will accurately reflect the defective flavor.

Some people also believe that coffee made from a coffee plunger is very cloudy, and the fine powder particles affect the taste when consumed. It is because the pressure pot uses a metal filter to filter coffee grounds, which has a worse filtering effect than filter paper. The solution to this is very simple. You can use the circular filter paper specially designed for French pressure pots and apply it to a set of filters, which can also filter out coffee liquid with the same clear and clean taste as hand brewed coffee. If you don’t want to purchase additional filter paper, you can also pour it into a filter cup containing filter paper for filtration, and the effect is the same.
