How to choose filter paper for hand brewed coffee?

Coffee filter paper accounts for a small proportion of the total investment in hand brewed coffee, but it has a significant impact on the flavor and quality of coffee. Today, let’s share our experience in selecting filter paper.

Before purchasing filter paper, we first need to clearly know what filter cup is directly used. If using fan shaped filter cups such as Melita and Kalita, you need to choose fan shaped filter paper; If using conical filter cups such as V60 and Kono, it is necessary to choose conical filter paper; If using a flat bottom filter cup, you need to choose cake filter paper.

The size of the filter paper also depends on the size of the filter cup. Currently, there are only two common specifications of filter paper, namely small filter paper for 1-2 people and large filter paper for 3-4 people. If the large filter paper is placed on the small filter cup, it will cause inconvenience in water injection. If the small filter paper is placed on the large filter cup, it will cause obstacles to brewing large amounts of coffee powder. Therefore, it is best to match.

Another question is about the issue of adhesion. This can be seen from the question “Does the filter paper not adhere to the filter cup? Actually, folding the filter paper is a skill!” Here, it is added that if you use a ceramic filter cup, you may encounter a situation where the bottom does not adhere. This is because the ceramic porcelain will be coated with a layer of glaze at the end, which has a thickness and slightly changes the angle by 60 degrees, At this point, when folding the filter paper, do not use the suture as the benchmark. First, stick the filter paper to the filter cup and press out the actual adhesion marks. That’s why I prefer to use resin materials with higher precision.

-Bleached or Unbleached-

The biggest criticism of log filter paper is the smell of paper. We do not want to taste the taste of filter paper in coffee, so we almost do not choose log filter paper at present.

I prefer bleached filter paper because the paper flavor of bleached filter paper is negligible and can restore the taste of coffee to a greater extent. Many people are concerned that bleached filter paper has “toxicity” or similar properties. Indeed, the traditional bleaching methods are chlorine bleaching and peroxide bleaching, which may leave some harmful substances to the human body. However, with the advancement of technology, most major brands of filter paper currently use advanced enzyme bleaching, which uses bioactive enzymes for bleaching. This technology is widely used in the field of medicine, and the degree of harm can be ignored.

Many friends have also been influenced by paper flavored comments and must soak the filter paper before boiling. In fact, the bleached filter paper of large factories can almost be odorless now. Whether to soak or not depends entirely on personal habits.

Interested friends can purchase several popular coffee filter papers on the market and compare them. They can observe their patterns, feel their hardness, and measure their drainage speed, almost all of which have differences. The speed of entering the water is neither good nor bad. Need to align with one’s own brewing philosophy.
