Why do coffee shops rarely see mocha pots

With coffee entering people’s sight and gradually becoming a part of life, the taste of coffee is no longer limited to the joy brought by hand brewing. There are various methods for making coffee, in addition to simple hand brewing, there are also Italian, cold extraction, siphoning, and other methods.

Perhaps you often hear in coffee shops: have a latte, cappuccino, and so on, these are Italian coffees! The so-called Italian coffee refers to various types of coffee made from concentrated coffee extracted by pressure using a semi-automatic coffee machine as a base. If you don’t have a coffee machine and want to make coffee similar to Italian coffee at home, then we can use the coffee machine’s replacement to make it, which is the Mocha pot.

What is a Mocha pot?

First, let me share with you what kind of equipment the Mocha pot is. Mocha pot was invented by Italian Alfanso Bialetti in 1933. It uses a base heating method to brew coffee and is a pressurized type. It is the most common machine for brewing Italian coffee and is widely used in Italian households.

The Moka Pot is a utensil commonly used by Italian families to extract strong coffee. In recent years, the appearance design of mocha pots has become increasingly diverse, making many people unable to put it down and unable to resist buying a few to put at home. They are not only practical but also can be used as decorations, killing two birds with one stone. Mocha pots are commonly used in European and Latin American countries, and are referred to as “Italian drip pots” in the United States. With it, you can easily make Italian coffee and drink it at home. The concentration of coffee made from a mocha pot is not as high as that of espresso. Although the taste is equally delicious, its concentration cannot compare to that of espresso. So it can only serve as a substitute.

Structure of Mocha Pot

Since a Mocha pot can make delicious espresso, let’s take a look at the structure of a Mocha pot. A Mocha pot is composed of an upper pot, a powder pot, and a lower seat. The lower pot is a water tank for holding water, the powder tank is used to hold coffee powder, and the upper pot is used to hold the extracted coffee liquid. The principle of extracting coffee from a Mocha pot is very simple, which is to use the steam pressure generated in the lower pot. When the steam pressure reaches a certain level, it will push the hot water to the upper pot and brew strong and fragrant coffee. Through the following pictures, it can actually be seen at a glance, presenting its internal structure and coffee extraction principle very clearly.

Mocha pots can be divided into single valve and double valve (even three valve), with double valve Mocha pots capable of producing more coffee oil than single valve ones. Double valve refers to adding a pressure accumulating valve on the basis of a single valve and a hollow conduit. This pressure accumulating valve usually blocks the small hole of the hollow conduit for coffee liquid, requiring higher vapor pressure to flush it upwards and make the coffee liquid spray out. The flavor of coffee brewed with a single valve and a double valve is also different, because the extraction pressure of a double valve is higher, making it easier to produce high concentration coffee with a more concentrated taste, and its oil content is also thicker. Interestingly, because mocha pots are often heated on a stove and extracted using steam pressure, they are also known as direct fire espresso pots.

Advantages and Disadvantages of Mocha Pot

The principle of extracting coffee from a Mocha pot is very simple, which is to use the steam pressure generated in the lower pot. When the steam pressure is high enough to penetrate the coffee powder, it will push the hot water to the upper pot. The coffee extracted from a mocha pot has a strong and sour taste, as well as oil and fat. Therefore, the biggest advantage of a Mocha pot is that it is small, convenient, and easy to carry. It is a must-have for people who like to go up and down the mountain and sea. It is durable and can brew high-quality coffee. The operation is simple, and ordinary people can grasp the skills of brewing coffee.

But its drawbacks are also very obvious, that is, the upper limit of coffee flavor made with a mocha pot is low, that is, it is not as clear and bright as hand brewed coffee, nor is it as rich and delicate as Italian coffee machines. Therefore, there are almost no mocha pots in boutique coffee shops, but as a household coffee utensil, it is a very easy to use product.

The principle of extracting coffee with a Mocha pot

Mocha pot extracts coffee by utilizing the vapor pressure generated in the lower pot (approximately 1.5-3.0 atmospheres). When the steam pressure is high enough to penetrate the coffee grounds, it will push the hot water to the upper pot. On the way to the pot, the hot water will pass through the coffee powder in the filter to quickly extract the essence of coffee. The extracted essence of coffee has a strong taste and both sour and bitter. It is the coffee utensil closest to Italian espresso.

What tools are needed to make a cup of Italian coffee with a Mocha pot

1. Mocha pot
2. Gas stove and furnace frame or “induction cooker”
3. Coffee beans
4. Bean grinderCombination: Brazil+Colombia Composition ratio: 7:3 Baking degree: medium deep Baking flavor description: chocolate, cream, nuts, butter, caramel

Boiling method

(1) First, pour hot water into the lower seat (if there is hot water, add hot water; if there is no hot water, cold water is also acceptable).
(2) Put the coffee powder into the powder container, fill it to about 9% full, and lightly tap the edges to make the coffee powder dense and smooth.
(3) Tighten the upper and lower seats to prevent coffee from spilling out during the process.
(4) Place the mocha pot on a small gas vaporizer or induction cooker and heat it up. Start with medium heat, and when you hear a hissing sound, turn the heat to low heat. The coffee will naturally flow out slowly.
(5) When the sound turns into a slight popping sound, you can turn off the heat to avoid excessive extraction. The fragrant coffee has already been completed.

Pay attention to small reminders

(1) Mocha pot belongs to the brewing method of Italian coffee, so the concentration is relatively high and usually needs to be diluted before drinking.
(2) Mocha pot is suitable for finely ground coffee powder, and the cooking effect will be better!
(3) Please avoid burning the Mocha pot empty to avoid damaging the pot’s structure.
(4) Used mocha pots must be cleaned to avoid fine residue affecting the filter holes and rubber structure.
(5) Do not immediately brew coffee to taste a brand new Mocha pot. You need to brew coffee three times before washing the pot to remove any harmful substances (the coffee needs to be poured out), and then you can officially brew coffee to drink.

After brewing mocha coffee, there are many ways to drink it, and the most basic way is to mix it with water. Sugar free and milk free coffee is the best way to reduce fat. Of course, fresh milk can be added directly, and the taste is similar to the latte flavor in a coffee shop.

If you want to add fresh milk, you need to heat the milk to around 60 to 65 degrees, which will present a perfect fusion of milk and coffee. So, a perfect latte coffee is ready. Of course, adding some ice and condensed milk, imitating Vietnamese coffee is not a problem. Mix concentrated coffee with condensed milk and add ice.
